4th of July Mushroom Burgers

I have been feeling a bit under the weather.  I don't feel sick, I just feel like I don't want to be around people.  My mentor and teacher, Dr. John Fielder, says that unless we are squeaky clean in our habits when we are around people living an unhealthy lifestyle, it will drain our energy.  So his prescription is don't stay up too late, don't eat in restaurants, exercise in the fresh air and sunlight and get plenty of rest.  That is my my problem...I haven't been squeaky clean enough.

We are getting ready to celebrate the 4th of July - Independence Day.  Happy birthday America.  We are expecting our daughter, Molly, SIL Ken, and grandkids Zac, Braeden and Ashlyn to come celebrate with us.  I will try to not do too many unhealthy things.  We have plans to do the traditional hamburgers and hot dogs.  Here is a recipe I read about on Raw for $10 a Day that I will double for Mushroom Burgers.

Mushroom Burgers

1/2 red bell pepper
1/4 cup ground flaxseeds
10 oz box of sliced mushrooms
1/3 cup walnuts
1/2 white onion
1 hot pepper
1 stalks of celery
2 tbsp olive oil

Dehydrate the mushrooms for 2 hours. 
In the Vitamix liquify the red pepper.  Add water as needed.  Add the flax seeds and let it soak for 15 minutes until the flax seeds get gooey.
In the food processor chop the mushrooms, walnuts, hot pepper, onion and celery until finely chopped.  Stir in the red pepper and flax mixture and the olive oil.

Form this into burgers and place on a teflex sheet.  Coat the sheets with a little oil to keep the burgers from sticking.  Dehydrate for 2 hours.  Flip onto dehydrator screen and dehydrate another 2 hours.

Serve burgers on lettuce leaves with avocado mayo and chopped onions.

Avocado Mayo
1 ripe avocado
1 tsp agave nectar
1/4 tsp sea salt
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1 tsp vinegar

Blend all ingredients together with a fork until creamy. 

We stopped at a roadside stand near Donaldson, AR and bought melons and tomatoes.  The melons were the best of the season.

The garage sale is ready to begin.  We had a garage sale on Friday and Saturday.  It was a big success.
