Vision Board

For lunch today I made a recipe of Zucchini Pasta with a Pepper Sauce.  I got this recipe from Tannyraw on the YouTube.  I like Tania because she is totally raw on an extreme budget.  Her YouTube channel is worth checking out even if you are not all raw.

We had company for lunch today.  Our friend, Karl, came over to share his wisdom with us.  It is always a good time sitting around the table, talking and sharing a meal.  Karl always eats the raw foods I prepare and expresses thanksgiving and appreciation for them.  What a good friend!  Here is the recipe for the pasta dish:

Zucchini Pasta with a Pepper Sauce:

Make the pasta by using the spiralizer to make spaghetti from zucchini.  I used four zucchini today. Put the spaghetti into a bowl.

Pepper Sauce for the Zucchini Pasta (I doubled this recipe today because we had company.)
3 dates
1 clove garlic
2 Tbsp Italian Seasoning
Small bell peppers- 2 orange, 2 red, 1 yellow ( I used 1 large red bell pepper and 6 small yellow peppers for the double recipe)
1 carrot
1 Tbsp lemon juice
Blend all together in the Vitamix.  Pour the sauce over the zucchini spaghetti.
Garnish with some small yellow pepper rings.  Sprinkle with Italian Seasoning.

Yesterday and today were both cold and rainy days.  This is our third blackberry winter so far this year.  We had to turn the heater back on.

Okay, so I decided to color my hair with henna because henna is a natural product which seems to not have any adverse effects.  Problem is, it didn't look very good.  Today I tried to fix it with a demi-color from Natural Instincts.  It's not healthy, but it is not supposed to be as bad for you as a permanent hair color. It looks better, but the red is still visible.  It will have to do for now.

I haven't done a vision board in over a year.  Maybe it's time to do that again.  It's fun and it helps with thinking about what you want to achieve.  When doing a vision board it helps to ask yourself, "What do I want to accomplish in the next three months?"  What about a five year plan?  A twenty-year plan?  I don't want to use the vision board to make myself busier, but to hone in on the essential.  It's exciting to think about bringing the focus in tighter.  The Bible says if your eye is single, your whole body is full of light.

I like to think about my body being the temple of God.  Doesn't that make you think about your body in a different way?

I ordered a book, The Goldfinch by Donna Tartt, on the recommendation of a lady I sat behind at a concert in Little Rock last week.  The 700 page Pulitzer Prize winning book arrived yesterday. The author, Donna Tartt is from Greenwood, MS.  She describes her method of writing with a Rudyard Kipling quote...."drift, wait, and obey".  Isn't that good?  Drift, wait, and obey.  That is an explanation of living in harmony and not trying to force things to happen.  Maybe that should be the title of my vision board!

"We're winged creatures on some level, but we're also trapped.  We can fly, but we can't". -Donna Tartt

In the Goldfinch, the main character, Theo, talks of the finest thing in life being to "throw yourself head first and laughing into the holy rage calling your name".  That's a good title for the vision board, too!

I am looking forward to getting into this book.

Nuggets adapted from the Quintessence of Natural Living this morning:

We all have to die sometime, it does not matter how hygienically we all live.  Can we learn to face death without fear?  Death begins the moment we are born.  Inhale life and exhale death.

Death is not somewhere in the future.  It is a part of life.  Death is ever present.  With each exhalation we are dying a little at a time.  Accept it as a process that is already happening.

There are three mysteries of existence:  death, life, and love.

Life is not something we want to take for granted.  We need to ask questions and try to understand.

Most of the time we postpone death rather than accepting it here and now.  We put it somewhere in the future.  We avoid love by creating substitutes of possessions, attachments, and sentiments.  These things are ego trips, not love.

Cells die but cells renew also.  Each moment you die and each moment you resurrect.  Each moment the past disappears and a new being resurrects.

Death is the only certainty.  We flow like a river between life and death on either hand.  When you understand this, you can relax.  When we accept that death is happening to each of us we become calm and tranquil.  In that acceptance you live a thousand lives.

Don't try to avoid the idea of death.  In avoiding death you miss life.

To health and happiness.

Mother's Day with my daughter, Molly.

Happy in the Garden

Yesterday I worked in the garden instead of walking around the neighborhood.  It is a different feeling. It's true that I only got in about 6500 steps by the end of the day instead of over 10,000, but it was a different feeling.  Travis planted some tomatoes and peppers, I cleaned the lower deck and pulled some weeds.  Lucy dug in the dirt and felt so happy.  I felt the same way. Working in the garden makes you feel happy and productive. I was puzzled by a plant growing in the herb garden as a weed.  I started pulling them out but decided to check if they are edible.  Edible weeds, such as dandelion,  can be used in our smoothies.  I put a picture on Facebook to ask for help identifying the weed, and the consensus is that it is plantain.  Some say edible and some say not, but I am inclined to think that it is edible.  My brother, Max, lives up in the mountains, and his neighbor says it is edible and the smallest leaves are best with...

The Lou Corona Story

Yesterday, we went to Magic Springs with our daughter, son-in-law and three grandchildren.  The landscaping there is beautiful this year.  This one little flower didn't let a little concrete stop it.     Lunch today was three bananas which I ate about 1:30.  I'm letting my body rest a little bit after eating too much food the last couple of days.  I did domestic chores today.  But Travis made a trip to the City Compost Facility for another load of compost.  We'll use it on the trees we still have left to plant. We have a volunteer tomato plant coming up in one of the garden beds.  It's doing pretty well, too.  I have it on my to do list to buy some more tomato cages. The arugula I planted is up. The kale Travis planted is up. The new plum tree is planted. Here is a volunteer Poke Salat that came with the blueberry plant.  Travis planted some more blueberries in the blueberry row that lines our driveway. The...

Alko Shredder

It was chilly this morning, but I got out and worked a bit in the garden bed that had the strawberries moved out yesterday.  I fed it with the mineral supplement and fertilizer.  I started putting on compost, but ran out of time before I finished.  We are going to plant some kale in this bed. Bed #3 weeded, minerals added, fertilized, and partly composted. Travis and I went to an estate sale today.  First thing we saw was a garden shredder.  We bought it for $60.00 and brought it home.  There are lots of leaves in my yard that could be shredded. Our new used Alko shredder...made in Germany.    For dinner tonight I made a soup.  The inspiration came from Dara Dubinet on her You-tube video, but mine was different because I used what we had. My vegetable soup recipe:  Juice a beet, 6 carrots, 3 broccoli stalks, and a sweet potato.  Then heat a pot of water on the stove, but do not boil.  In the Vita-Mix, put 3 med...
