Today was a travel day. We left Dallas about 5:00 a.m. and arrived in Hot Springs a little after 10:00 a.m. in time for Molly to open JoAnna A Boutique on time. Travis picked me up at the store.
Morning coffee came from Buc-ee’s near Dallas. I wasn’t hungry this morning, so the coffee was all I needed. I had a goodie ball and some grapes when I got home.
I had a Walmart grocery pickup at 5pm, so tomorrow we should be able to get back in the groove.
For dinner I made a salad, baked potatoes, and pesto garbanzo beans. I baked the potatoes in the microwave in a potato pocket.
Recipe for the pesto garbanzo beans:
1 Tbsp olive oil, 1 tsp minced garlic, 2 Tbsp pine nuts, 2 tsp dried basil, 1 can garbanzo beans rinsed and drained, 5 oz bag spinach.
Add olive oil to a skillet over medium heat. Add garlic and pine nuts. Cook 1-2 minutes. Add basil, beans, and spinach. Cook until spinach is wilted and beans are hot, 2-3 minutes.
Serve over baked potatoes. Season with salt and pepper. Garnish with Parmesan if desired.
After dinner tea was Camomile with Lavender.
I finished the Trevor Noah book today, Born A Crime and started on Thinking, Fast and Slow by Daniel Kahneman.
