Imperfectly Raw Day 1 - Thursday, 8/19/21

It's a good day to have a good day!

Travis had a pot of Seattle’s Best organic fair trade coffee brewed and waiting when I got up this morning. 

I made Lemon Ginger Blasts for our first meal, and Green Smoothies for our second meal.  (2 bananas, a kiwi, 2 dates, scoop of green powder, scoop of prebiotic powder, broccoli micro greens, 1 can coconut water, frozen mixed fruit to top of blender, and water to 3/4 of blender).

I attended a ladies luncheon in Hot Springs Village today.  We wore our masks and showed our proof of vaccination in an effort to stop the spread of COVID here in our part of the world.  Arkansas is a hot spot right now. I took some raw Coconut Fudge for the snack table, and I took my smoothie for my drink.  I volunteered to mail out some postcards. It was good to visit with old friends as well some newer friends.

Here is the recipe for the raw Coconut Fudge inspired from the Rawvolution recipe book. I doubled this recipe to serve to the raw foods group on Wednesday and to the ladies luncheon on Thursday.

3 cups walnuts (ground in food processor until creamy).  In a separate bowl mix together 1/2 cup cacao, 2 cups unsweetened shredded coconut, 5/8 cups agave nectar.  Then mix in the ground walnuts.  Press into a Pyrex dish and refrigerate to help firm it up.

Books: My New Years resolution was to read the New York Times best seller list.  Right now I am listening to Born a Crime written and narrated by Trevor Noah.  It’s about his experiences growing up in South Africa.

I made this Minestrone Soup for Travis. This is a modified PlateJoy recipe.

I onion diced and 3 small carrots diced.  Cook 4-5 minutes in 2-1/2 Tbsp olive oil until vegetables soften.  Add 1-1/2 Tbsp minced garlic and cook for a minute longer. 

Add a box of vegetable broth and a 28 Oz can of diced tomatoes.  Season with 1-1/2 Tbsp of Italian seasoning, and a little Herbes de Provence, salt and pepper. 

Add a couple of cups of pasta and simmer about 10 minutes. Add a can of drained green beans and a can of drained and rinsed white beans and cook for a couple more minutes.

I relieved Molly at JoAnna A Boutique from 1:30-5 today so she could take care of some other things.  After work I made three recipes to use later in the week.  I made the Raw Onion Bread, Sunflower Seed Cheese, and Pizza Sauce.  I see some raw pizza in my future.  Shout out to Rawvolution for inspiration.  

Dinner tonight was leftover Mock Tuna made with sunflower seeds, a green salad, seed crackers, and Coconut Fudge. 

I have a gallon of kombucha waiting to be bottled for second ferment, but I did not get to it today!

Happy in the Garden

Yesterday I worked in the garden instead of walking around the neighborhood.  It is a different feeling. It's true that I only got in about 6500 steps by the end of the day instead of over 10,000, but it was a different feeling.  Travis planted some tomatoes and peppers, I cleaned the lower deck and pulled some weeds.  Lucy dug in the dirt and felt so happy.  I felt the same way. Working in the garden makes you feel happy and productive. I was puzzled by a plant growing in the herb garden as a weed.  I started pulling them out but decided to check if they are edible.  Edible weeds, such as dandelion,  can be used in our smoothies.  I put a picture on Facebook to ask for help identifying the weed, and the consensus is that it is plantain.  Some say edible and some say not, but I am inclined to think that it is edible.  My brother, Max, lives up in the mountains, and his neighbor says it is edible and the smallest leaves are best with...

The Lou Corona Story

Yesterday, we went to Magic Springs with our daughter, son-in-law and three grandchildren.  The landscaping there is beautiful this year.  This one little flower didn't let a little concrete stop it.     Lunch today was three bananas which I ate about 1:30.  I'm letting my body rest a little bit after eating too much food the last couple of days.  I did domestic chores today.  But Travis made a trip to the City Compost Facility for another load of compost.  We'll use it on the trees we still have left to plant. We have a volunteer tomato plant coming up in one of the garden beds.  It's doing pretty well, too.  I have it on my to do list to buy some more tomato cages. The arugula I planted is up. The kale Travis planted is up. The new plum tree is planted. Dr. John Fielder's Visit

My Natural Hygiene teacher and mentor, Dr. John Fielder, included us again on his Worldwide Raw Food Lecture Tour.  He arrived at my house on Monday, May 14.  Tuesday we had a raw foods dinner at the house for a few of the people that helped to organize the events here in Arkansas.   Wednesday, the Hot Springs Village Raw Foods Group met at Gulpha Gorge Picnic Area for a picnic with Dr. Fielder.  Wednesday night he made a presentation here in Hot Springs Village about the Principles of Natural Living.  The following night he spoke at Mt. Pleasant United Methodist Church in Little Rock.  There was a good crowd at both events.  Dr. John Fielder Here I am introducing Dr. Fielder at the HSV lecture. At the lecture we served some raw food treats for our guests to sample.  One of the items was a chocolate granola bar.  I cut the squares much smaller for this event because of the number of people we had to serve.
