Imperfectly Raw Day 24, Saturday, 9/11/21
I guess I was tired today because I slept until 8:30!
I made Indian Fried Rice for dinner.
Breakfast: Coffee and a juice made with 4 apples, 1 lemon, 1 cucumber, 4 stalks celery, and 2" ginger.
Lunch: Smoothies made with frozen bananas, 4 mangos, 2 big handfuls of spinach, and water. And a Lara Bar.
Dinner: Salad using a bagged salad mix with chopped onion and cherry tomatoes. I used the leftover Orange Pepper Dressing. Multigrain chips. Indian Fried Rice.
Recipe for Indian Fried Rice for 2:
1/2 yellow onion, 1/2 yellow bell pepper, 1 can green beans, 2 tbsp. chopped cilantro, 1 package of boil in the bag brown rice prepared, 2 tbsp. olive oil, 2 tsp minced garlic, 1/4 cup peanuts, 1/2 tsp cumin seeds, 1/4 tsp red pepper flakes, 1/2 tsp ground turmeric, 1/2 tsp ground coriander, 1/2 lime.
Thinly slice onion and bell pepper. Chop cilantro and set aside.
Cook rice according to directions on the package.
In a large skillet over medium heat, add 1 tbsp. or more olive oil. Add garlic, onion, bell pepper, and green beans. Stir and cook about 5 minutes. Season with salt and pepper. Transfer to a bowl.
Add another tbsp. of olive oil to the skillet. Add peanuts and cook a couple of minutes. Add cumin seeds and red pepper flakes. Add rice and stir. Add turmeric, ground coriander, and a pinch of salt. Add the vegetables back in and cook another minute.
Remove from heat and season with salt and a squeeze of lime. Top with cilantro.
