 My fitness tracker is telling me I am not getting very much sleep.  Today I got 6 hrs 38 min which is my best day since I have had the tracker. In order to promote a healthy brain seven to eight hours a night is a good number to aim for. 

I'm still coughing and not feeling well, so I opted out of flute rehearsal tonight and picked up one of BinaxNow COVID-19 Antigen Self Test kits from Walmart.  You get two tests in the box for $14.00, and you get your results in 15 minutes.  It took me a couple of hours to get up the nerve to swab my nose, but it was not so bad.  You only have to insert the swab about 1/2"-3/4".  Very happy to get a negative result.



I made a green juice for two with celery, 1 cucumber, 8 collard leaves, 1 bunch dill, 1 bunch cilantro. 1 lemon, 4 Napa cabbage leaves, and 2 cups of spinach.  I added the celery last and juiced up to the 1000 ml line on the juice container.




I made a quick trip into Hot Springs to open the boutique for Ashlyn and Shane.  They drove in to work in a different car and did not have their shop keys.  I was happy to get to see them for a few minutes.  There were Wi-Fi issues at the shop, also.  And coming home my normal route was blocked, and I had to back out and go a different way.  So a day of obstacles.


I made smoothies for lunch: For two people - 4 oranges peeled, 4 bananas, 2 cups frozen strawberries, 4 Tbsp ground flax seeds.




Dinner:  Cauliflower and Red Lentil Tacos

Cauliflower:  Preheat oven to 425 degrees.  Place 4 cups of cut cauliflower on a baking sheet.  Coat with 1 Tbsp of olive oil, salt and pepper.  Roast for about 25 minutes.

Lentils:  Heat 1 Tbsp olive oil.  Add 1 diced onion and 1-1/2 Tbsp minced garlic.  Cook for about 5 minutes on medium heat.  Add 1/4 cup tomato paste, 3/4 tsp cumin, 3/4 tsp chili powder and saute a minute more.  Add 1 cup dry red lentils and 2 cups vegetable broth.  Cook until lentils are tender, about 25 minutes.  Season with salt and pepper.

Mayo sauce:  Whisk together 1/4 cup mayonnaise, juice of a lime, and 1-1/2 Tbsp chipotle pepper and sauce.  Season with salt and pepper.

Warm corn tortillas in a dry pan over medium heat to make tacos.  Or you can just serve the cauliflower and lentils over the whole grain tortilla chips.



I made Teechino for our evening tea.  And I popped popcorn, because I had a long conversation with my friend Susan this afternoon and we talked about how we did not eat popcorn anymore.  I guess that little voice in my head said, "We'll see about that."  I had a kombucha with the popcorn.

I prepped for raw foods tomorrow.   I am making a taco salad and a carrot cake.

Happy in the Garden

Yesterday I worked in the garden instead of walking around the neighborhood.  It is a different feeling. It's true that I only got in about 6500 steps by the end of the day instead of over 10,000, but it was a different feeling.  Travis planted some tomatoes and peppers, I cleaned the lower deck and pulled some weeds.  Lucy dug in the dirt and felt so happy.  I felt the same way. The Lou Corona Story

Yesterday, we went to Magic Springs with our daughter, son-in-law and three grandchildren.  The landscaping there is beautiful this year.  This one little flower didn't let a little concrete stop it.     Lunch today was three bananas which I ate about 1:30.  I'm letting my body rest a little bit after eating too much food the last couple of days.  I did domestic chores today.  But Travis made a trip to the City Compost Facility for another load of compost.  We'll use it on the trees we still have left to plant. We have a volunteer tomato plant coming up in one of the garden beds.  It's doing pretty well, too.  I have it on my to do list to buy some more tomato cages. The arugula I planted is up. Alko Shredder

 It was chilly this morning, but I got out and worked a bit in the garden bed that had the strawberries moved out yesterday.  I fed it with the mineral supplement and fertilizer.  I started putting on compost, but ran out of time before I finished.  We are going to plant some kale in this bed. Bed #3 weeded, minerals added, fertilized, and partly composted. Travis and I went to an estate sale today.  First thing we saw was a garden shredder.  We bought it for $60.00 and brought it home.  There are lots of leaves in my yard that could be shredded. Our new used Alko shredder...made in Germany.    For dinner tonight I made a soup.  The inspiration came from Dara Dubinet on her You-tube video, but mine was different because I used what we had.
