Imperfectly Raw Day 28, Wednesday, 9/15/21
Today was raw foods Wednesday. This group meets at our house on the 3rd Wednesday of every month. I made my coffee and then got to work making food and getting the house ready.
I made a Taco Salad using this recipe:
Salad Part: 1-2 heads romaine lettuce, 1/2 of a red onion, 1 cup chopped tomato, 1/2 sliced avocado, 1/4 cup chopped olives (I served on the side), 1 Tbsp. minced jalapeno (also served on the side), and 1 cup chopped cilantro. Toss together in a large bowl.
Taco Meat: 1-1/2 cups walnuts, 1 clove garlic, 1 tsp salt, 1 tsp cumin, 1 tsp parika. Process together in a food processor until the consistency of taco meat. Add taco meat to salad and toss.
My other special dish was a Carrot Cake.
Cake: 1 cups chopped carrots, 4 dates, 4 dried figs, 1/2 cup raisins, 1/4 cup shredded coconut, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp allspice
Frosting: 2 cups almond yogurt, 4 dates, 1 tsp vanilla, 1 Tbsp. lemon juice, 1/4 tsp salt, 3 Tbsp. cashews. Blend in high speed blender on high until smooth and creamy.
We had a wonderful turnout this time at raw foods. We didn't have a speaker this month, but this is a knowledgeable group fully capable of teaching each other. Star shared some information on a company called puro3 that offers ozonated oils. These oils are used topically. Check them out here
For dinner tonight I didn't feel like preparing anything so we ordered pizzas from Dominos using their $5.99 each deal. I got a veggie pizza. Only two toppings allowed on the special deal so I got onions and tomatoes.
